Preparation of Lamb leg kurma is explained in the below method.
Ingredients:
- Lamb Leg – half KG
- Turmeric Powder – half tea spoon
- Onion (chopped) – 1 cup
- Garlic – 6 pieces
- Green chili – 1 no.
- Ginger (chopped) – 1 table spoon
- Pepper – 1 tea spoon
- Anise – 1 tea spoon
- Potato (peeled & chopped) – 2 nos.
- Coconut (Grated) – half cup
- Cumin seeds – 1 tea spoon
Preparation of paste (to be added for Kurma):
- Add a tea spoon of oil, onion, green chili and roast it
- Add garlic, ginger, pepper, cumin seeds, Anise and roast it well
- Add grated coconut to the mixture and mix it well
- Grind these mixture to a nice paste
Preparation of Kurma:
- Place the pressure pan on the Stove and add water
- Add the lamb leg, turmeric powder, chopped tomato into it and close the lid
- Wait for 5 whistles and change the boiled lamb leg to another vessel
- Add potatoes, a glass of water and boil it
- Close it and boil for 5 minutes in the high flame
- Add crystal salt and red chili powder as needed
- Add the grinded paste and mix it
- Boil it for 5 minutes in the high flame
